Carob – Traditional Rakokazano
At the Zargianakis Raki Distillery in Heraklion, Crete, visitors can experience authentic Cretan culture, learn about the traditional process of Raki (Tsikoudia) distillation, and purchase genuine Cretan products made by the Zargianakis family.
On Crete, Raki (Tsikoudia)—a clear, aromatic spirit—is more than a drink; it’s a symbol of Cretan hospitality and communication.
Raki production takes place every autumn after the grape harvest, a custom established in 1920 by Eleftherios Venizelos. The distillation uses grape pomace (the remains of pressed grapes) as raw material. The first distillate, called Protoraki, is very strong, and as the process continues, the Raki gains its balanced flavor and ideal alcohol content.
